This coffee comes from the Huila region of Colombia, where eco-geneticist turned coffee producer Wilder Lazo has his farm. Wilder is a nature-first, profits-second kind of guy. We've been working with him for a few years now, and you may remember his delicious washed Wush Wush from roasts past.
Double Helix is a head turning Pink Bourbon, having undergone a honey process - a processing technique where part of the coffee cherry remains on the seed during the fermentation and drying. The result is a superbly sweet, floral and memorable coffee.
